Our Sake

VINTAGE SAKE

CAMBRIDGE

In the same vein as a fine wine or champagne, we present our CAMBRIDGE sake in the spirit of celebration and commemoration; an entirely new way to enjoy sake. This is brewed as a kijoshu which has long been an integral part of sacred ceremonies and festivals in Japan. This rare and highly prized sake is ideal for laying down over several years as it matures well. Stored in the Fordham Abbey cellars for 3 to 5 years waiting for the day that special birthday or wedding arrives, this is a bottle that will be steeped in the history and romance that flows through Fordham Abbey itself.

JUNMAI SAKE

DOJIMA

Close to the city of Cambridge, the world-renowned seat of wisdom and knowledge, is born the first sake made by Dojima Sake Brewery. With age old skill and techniques passed down from the famous Settsu Tonda brewing region, this sake is handcrafted using carefully selected Japanese sake rice and pure English water. Five years from conception to birth, this bottle of Dojima Junmai Sake symbolises Dojima’s long held dream of bringing top quality sake to the world.

Cafe & Restaurant

Adjoining the Brewery, there is a Japanese Cafe Restaurant already built and ready and waiting to open to the public soon, as soon as the the Pandemic is over!
